The problem with self-hosting is that I will never be better at cybersecurity and disaster recovery than someone like Google, Microsoft, or Apple. I'm probably technically capable of configuring and hardening self-hosted services on a VPS, but I simply don't have the time to constantly patch, monitor, verify backups are working properly, etc. It's a full time job and it's one that the vast majority of people should outsource to experts.
