Alternative open-source solution like Google Docs but MUCH simpler

We help people easily write keepsake books in their browser from single stories they write in separate sections. Meminto then assembles all the snippets into the finished book.

Currently, we display a preview using xpdfeditor.js – but some books have 300-500 pages, and if an unwanted line break occurs on page 50, it can't be easily adjusted in the PDF.

How could we solve this differently so that there is a clean page view, where the page breaks really match the printed book?
