As a dane I can confirm this is absolutely made up, neither the behaivior of danes in regards to untied shoes, nor the HC andersen story is true.
True, fun fact about HC Andersen though: he had enormous feet for the time, sporting a size 47 shoe.

As a Dane I can confirm this is mostly true regarding the behavior of Danes in regards to untied shoes, allowing for literary exaggeration, there is something in the Danish spirit that hates an untied shoe and rushes to correct the behavior.
As for the rest it seems absolutely certain, given the fantastical element of a giant crow, that it is made up, and surely nobody in their right mind would ever believe it to be otherwise.
