If the AI investment boom was serious, it would be focusing on electricity

If all these investments were serious there would have already been serious moves to get electrical grid capacity up to where it needs to be. These deals are flashy, and they are being done to generate investor FOMO but they aren't serious.

There's plenty of capacity if you are willing to pay more than the people currently using it. And since a lot of people are living paycheck to paycheck already it's easy enough to interpolate that the goal is to make them homeless and without access to electricity so the new AI Datacenters have enough.
It's much easier to do if you don't care about human beings.

Normal people need electricity. That makes it a political goldmine for politicians. People won't give it up without a serious serious serious fight.

Do you want food or electricity this month?

Kind of

You can just take it from existing people. Electricity is optional in West Virginia and Indiana.

That's obviously what they are going to try to do. Even if they started building today, it takes a long time to add additional capacity to the grid. The data centers will long be finished before the power, even, if they were being built in parallel to start. The political fight will be one for their lives. People will get vicious about this.
