Best books/guides to learn about Stable coins in 2026

Hi,

I'm looking for technical, regulatory, or economics related guides and/or books that help explain the utility of stablecoins.

I understand that they are pegged to fiat currency but am curious to understand more. Eventually I would like to implement it as a prototype project for a startup.
