Why does it seem like they frame this setting as a bad thing? I would like to believe that most people just want to play the game, and not spend the first several hours with the game tweaking and tuning settings to make the game playable.
With Apple’s limited line of hardware they can have optimal settings for every config. This seems like a great thing. Most normal people aren’t pixel peeping.
The Nintendo Switch is the 3rd best selling console of all time, despite having worst graphics and frame rates than its competitors. The masses don’t prioritize the same things as hardware and game reviewers.
That is, the Mac version does not require paying for it again on the app store.
It is, unless Apple is involved... take a look at Death Stranding 1, whose Mac port was very promoted by Apple and is only available directly from the app store.
So every time a high profile game gets a Mac port, it's not safe to assume you'll just get it on Steam.
If you prefer to keep your platform options open, those you mentioned are as useless as the mac app store.
Problem are those convinced that they need Steam to play games.
Humble Bundle? They mostly give out Steam keys. Itch.io maybe. For the indies that are available there.
I don't suffer from FOMO, there are enough games to chose from than available hours on a day, on each platform specific store.
The real question I guess is, why do you need to play a game on three separate boxes?
Who knows what I'll have available next year?
I don't play fresh-from-the-presses multiplayer shooters (moba, survival, battle royale, whatever the term in fashion is this week).
I only (with the exception of Minecraft below) play single player games that don't lose their appeal if they're not in fashion any more, some times years after launch.
So obviously I like to have them available on as many platforms as possible.
And if we're talking Minecraft, I do want it ready on my laptop when I have 10 minutes on the go but I also want it ready on my desktop for when I have actual gaming time.

However, that's not what makes me care about energy efficiency. It's the fucking cooling noise.
I was probably around 25 when I realized that 30 fps is good enough and if i stick a passive huge ass radiator on a GPU that can do just that I'll be able to hear the game's soundtrack even on very low volume and without using headphones...

The only reasons to get a gaming laptop is that you are space constrained or need to travel, while the only reasons to get a gaming PC is to get the best possible performance and/or build/upgrade your hardware.
If noise is a big issue, Mac is not a solution, because you don't have so many available games to begin with. Consoles like Xbox Series X are extremely quiet these days (at reasonable powe consumption -- <200W), while on a well-built gaming PC you can choose whatever solution you want to lower heat and fan noise.

I have a playstation 5 and i snagged a ps4 disc of cyberpunk 2077 from the bargain bin for next to nothing when it was the scandal of the day that it didn't really work on consoles.
CDProjekt Red being CDProjekt red, that gets me a full free upgrade to whatever the current version of the game is on ps5.
Damned if i'm playing that game without a mouse though. Unless they dumbed down the inventory to the point it's usable with the sticks since the last time i played.
Some games have "console dna". I wouldn't go near the PC version of Elden Ring or Death Stranding. But some have "pc dna". I don't think I want to try to play cyberpunk on a console. Not any of the acceptable to brilliant indies I bought, most of which aren't available on consoles.
Let's put it this way:
I'm going to play the games i please on the hardware i please to play them on. I will not build or buy a bling box that hovers above the ground from all the fans to be able to get 1400 fps at 12k resolution just so I can brag on Twitch.
