Re: Apple Notes. There is no way to adjust line spacing, so paragraphs look (according to reddit commentators) super crunched or smooshed.

To make notes really readable, one must insert a blank line.

I copy such notes into Pages and increase the line/paragraph spacing.

I have not explored synching in Pages other than just posting to iCloud drive.

And I have not adopted notion or obsidian since trashing Evernote.

My situation?

RTF: Random Text Files.

For text without breaks (transcripts), I use sentence splitter. [0]

I didn't find a paragraph splitter per se, but found some online text utils that do, IIRC, but have not adopted it in my workflow. (And forgot it)

I find working across macos and ios to be dreadful, with all the differences, but here I am sitting in the east chair with the phone. Tapping away.

Ipads and laptops don't work for me in the easy chair.

Best deal is the desktop with 27 inch display, but not as comfy.

Spoiled for *nix.
