I've seen a few of those "Every fucking website in 202*" examples on here the last few days, and I feel it deep in my bones. As a result of the constant auto-play videos, CTAs, cookie warnings etc. etc., this is probably the most used self-developed app I run. It's super simple - just drop in the URL of the article and it'll extract (maintaining structure, formatting, pullquotes, images etc.) and save into an SQLite library if you want to come back to it later.

Saves nicely as a PWA for tablet / phone reading.
